All Japanese sake is made from rice.
This one, Chikurin is made only from rice that we grow.
We must care well for the soil to make good sake.
【 Private cultivation rice 】
We need excellent rice to make great sake.
If the rice is not good enough, we can't make good sake.
Therefore, it is necessary for a brewery to grow rice.
Only our town was chosen by the Japanese government as the select agricultural area for sake rice.
By the way, rice is graded by its surface in Japan. Its cultivation is never considered.
We don’t think this is an appropriate way of grading.
We have grown Yamada-nishiki since 1986.
Our method of growing rice is different from that of the mainstream in which they pursue rice harvests in bulk.
We work on San’ou which brings out energy in the rice.
Although it is not a high quantity yield, it is of a high quality.
※ San’ou
San means 3 and Ou means yellow in Japanese.
San’ou is the method by which we let rice wither and ‘yellow’ 3 times on purpose.
First, we let the rice wither just before it is planted as seedlings in the rice paddy.
At the beginning of August, we let the rice wither again by starving.
When we reap the rice it will dry and yellow for the third time.
This way, we are able to produce healthy and strong rice. The rice will be hardy.
【 Fermentation 】
Fine sake is made by the skill of an experienced brewer.
There is a group of brewers called Bicchuu-touji who have a history of over 360 years working here.
Their sake-making is concentrated on leaving the taste of rice in the sake which complements the climate and food in Okayama.
The brewer’s skills have been handed down through generations.
And we have been trying to bring it to perfection and pursue an unforgettable taste.
【 Quality control 】
We have several tanks and 5 refrigerators in which we store sake. We check the sake on a regular basis.
This enables us to control the temperature and supervise the development.
We might ask you not to sell our sake unless conditions suit sake consumption.
We’ll never stop pursuing the best sake.
It was founded in 1867 at the end of Edo period.
Since then we have been making sake.
