When we make Chikurin we value the natural taste of rice most.
A brilliant but mild bouquet is crucial
though we place a special emphasis on the taste of the rice itself.
We have 3 kinds of Chikurin each of which has a characteristic flavor.
It was founded in 1867 at the end of Edo period.
Since then we have been making sake.
CHIKURIN-TAOYAKA (grace), as it means, you can enjoy its graceful and elegant aroma with soft lingering taste.
We have produced TAOYAKA, putting all power of rice extremely into every drop of it, through the all brewing processes from growing rice with the highest standard as much as possible.
When tasting TAOYAKA, at normal temperature and not over chilled, you can enjoy it more satisfactorily.
And we have also a suggestion of pouring TAOYAKA into the glass and stirring with air for a few seconds, which makes its taste and flavor have range.

CHIKURIN-KAROYAKA (lightness), as it means, you can enjoy its light and smooth taste based on rice, like fresh and delicious spring water from between rocks.
We have tried to make KAROYAKA smoother, using our traditional prepared water for brewing.
Once taking a sip of KAROYAKA, it would pass through your throat softly like water, and at the same time you would realize the fresh deliciousness of rice.
When tasting KAROYAKA, at room temperature or chilled slightly, it is the best.

CHIKURIN-FUKAMARI (depth), as it means, the more you have it, the more deeply you can enjoy its rich taste.
We have produced FUKAMARI considering the relation between sake and our health for a long time. Once you have, it would be soaked in you gently.
Please enjoy the rich and full-bodied taste of rice.
When tasting FUKAMARI, as warmed sake it is rather better and you would feel more comfortable and relaxed.

What does Rice polishing ratio mean ?・・・・・・
The rice polishing ratio(RPR) is the percentage of rice that remains after the outside layers have been scoured off.
It takes more time to wash high RPR rice because this rice is
slower to absorb water.
The low RPR rice is very absorbent, so it can be washed in just a few minutes.
If we wash the low RPR rice too long, it will dissolve into the water, and we won't be able to use it.
